On the Go Foods!!

Summer is a crazy time and we are often on the go more than we are eating at home. Here are some recipes to make being on the go a bit easier.  Try them and let me know what you think.

Apple Pancakes

1/2 of an apple

4 egg whites

2.5 tbsp ground flax seed

1 tsp cinnamon

Grate your apple into a small bowl. Beat it all up together and cook as pancakes in a skillet until browned on both sides.  Allow them to cool and pack for lunch.  These are great with a bit of honey or almond butter.

Coconut Flax Pancakes

1/2 grated apple

1 tbsp  coconut flour

4 egg whites

1 tbsp ground flax seed

Grate apple and mix all ingredients and cook in a hot skillet.

Jamie’s Crepes

1 tsp ground cinnamon

4 egg whites

1 scoop vanilla protein powder

1 tsp vanilla extract

Whip eggs into small bowl until fluffy.  Add the rest of the ingredient and cook in hot skillet until brown.  Fill with fruit, almond butter, or applesauce.

Nut Protein Balls

3/4 cup almond butter

1/2 cup almonds

1 tbsp apple butter

1/4 cup unsweetened shredded coconut

4 tbsp honey

1/4 cup ground flax seed

3 scoop protein powder

1/2 cup sunflower seeds, unsalted

1/2 cup walnuts

Soak nuts and seeds, except flax overnight. Rinse and process in food processor. Add ground flax, almond butter, protein powder, apple butter, and coconut. Mix well. Roll into balls and serve. They can also be dehydrated and frozen.

Tuna Patties

1 stick of celery

1 egg white

1 egg

2 tbsp ground flax

3 tbsp chopped onion

6 oz canned or fresh tuna

Mix it all and saute in skillet.  Serve on the top of some greens.

Protein Patties

1 tsp Braggs liquid amino acids or low sodium soy sauce

1/4 cup chopped scallions

1 tbsp tahini

4 cups of sprouts, any kind

1/2 cups sunflower seeds, unsalted

1/2 cup walnuts

You can dehydrate these too. Great for backpacking or weekend camping adventures.

Soak seeds and nuts overnight, strain and process in food processor. Process alfalfa sprouts enough to mince. Combine all ingredients and press into patties, serve over greens.
