Organic Summer Lunch Ideas

Curry Chicken Salad

1 pound cooked boneless chicken breast, chopped

2-3 TBSP veganaise (alternative to mayo)

2 tsp curry powder (no salt)

1 chopped apple

1/2 cup chopped red onion

1 tsp braggs liquid amino acids

Mix all ingredients together and serve over a bed of organic salad greens. Also works well with NO salt tuna.

Asian Cabbage Salad

4 cups chopped red cabbage

1 cup shredded carrots

1/2 cup chopped red onion

1/4 cup chopped scallions or green onions

1/4 cup chopped fresh cilantro

Dressing

1/4 cup rice wine vinegar

4 TBSP apple cider vinegar

2 TBSP honey

2 TBSP lemon juice

1 TBSP sesame seeds

1 TBSP sesame oil

1 tsp bragg’s liquid amino acids

Prepare veggies. Mix the rest of the ingredients in a small bowl or vita mix.  Pour dressing over veggies and refrigerate for 30 minutes.

Great with grilled chicken breast or fish.
