3 C Water
¼ C Sliced and Roasted Almonds
2 C Fresh Spinach (chopped in food processor)
2 C Fresh Cherries (pitted and halved) substitute grapes
1 Whole Cucumber (peeled, chopped in food processor)
15 oz. Can Garbanzo beans /chick peas (well rinsed)
1 Small Red Onion (chopped in food processor)
Sauce
¼ C Plain Nonfat Yogurt
3 T Extra Virgin Olive Oil
3 T Fresh Squeezed Lemon Juice (Juice of 1 Lemon)
2 Cloves Garlic
Salt and Pepper to taste
Rinse Quinoa in strainer several times. Boil Quinoa and salted water, turn to low and cover until cooked (just like making rice). Rinse cooked Quinoa in cold water to cool down. Add rest of ingredients, except sauce. Whisk sauce together in a separate bowl. Combine everything and chill for an hour before serving. Enjoy. It makes a lot.
