I am sure many gardeners can relate to this problem. I have been giving away at least a few a week and still have plenty more. So here are a few ideas.
Grilled Summer Squash
Slice your squash about 1/4 inch thick and place in a flat dish. Drizzle your squash with balsamic vinegar and olive oil. I like to add a bit of Braggs and pepper, maybe even a pinch of garlic powder. Let it stand for 10-15 minutes. Grill for 2-3 minutes on each side.
Chopped Summer Squash Salad
1 summer squash
1 kohlrabi (you could also use radish, diakon or jicama)
1 red onion
2 cloves of garlic
3 TBSP fresh Cilantro chopped
3 TBSP rice wine or apple cider vinegar
1 TBSP Braggs
Chop the squash and kohlrabi into small cubes. Dice the onion and garlic and place into a bowl. Mix the rest of the ingredients into a bowl and chill for 30 minutes or so. This goes great with burgers or as a side salad.
Other ideas:
- Grate a bit of summer squash and add it to red sauce and serve over pasta or roasted potatoes.
- Chop it up and put it in a stir fry.
- Add it in the last 10 minutes of roasting potatoes.
- Add it to your homemade salsa recipe.

- Make Zucchini Pancakes (refer to apple pancake recipe)
